Abstract
In an era prior to the invention of fridges and freezers that keep food edible for a long time, there was an urgent need for substitute methods to preserve food for off-season use. Hence, drying fruits for off-season use became an important practice and one that is worthy of research to highlight these methods that Memluks adopted to preserve fruits, and which were also followed by those who came after them. Though this industry was older than the Memluks, they excelled in the practice, especially that these fruits were seasonal. Thus these dried fruits became a much sought after commodity. The proof that they perfected the practice can be seen in the many shops that still sell these dried fruits to this very day.
